Ingredients:
  • 8 slices of bacon, chopped
  • 1 onion, diced
  • 1 bell pepper, diced
  • 4-6 potatoes, diced
  • 8 large eggs
  • Salt and pepper to taste
  • Optional toppings: shredded cheese, chopped fresh herbs (such as chives or parsley)

Instructions:
  1. Preparing the Campfire: Find a safe and suitable location for your campfire. Make sure to follow any regulations or guidelines for open fires in the area. Allow the fire to burn down until you have a bed of hot coals.

  2. Preparing the Skillet: Place a large cast-iron skillet on a grill grate or directly on the hot coals. Let the skillet heat up for a few minutes.

  3. Cooking the Bacon and Vegetables: Add the chopped bacon to the skillet and cook until it becomes crispy and the fat is rendered. Use a slotted spoon to remove the cooked bacon from the skillet and set it aside. Leave the bacon drippings in the skillet. Add the diced onion, bell pepper, and potatoes to the skillet and cook until they are tender and slightly browned, stirring occasionally. Season with salt and pepper to taste.
